Pairing wine with Thai cuisine is a delicate and fascinating exercise. Thai gastronomy offers an extraordinary aromatic palette — sometimes subtle and fragrant, sometimes vibrant, spicy, or tangy. Each dish calls for a wine capable of engaging in a true dialogue with these flavours, enhancing them without ever overpowering their finesse.
A wine that is too discreet may be lost among the complex aromas of Thai herbs and spices, while a wine that is too powerful can overshadow the delicate balance of the dish. Finding the perfect harmony between food and wine is therefore both a craft and a pleasure.
For more than thirteen years, this exploration has become a cherished ritual at Celadon. Once a year, together with a small group of passionate guests, we organise a tasting dinner where four to six carefully selected wines are explored alongside Thai dishes. The goal is simple: to discover the most harmonious pairings and identify the wines that reveal the full subtlety of Thai cuisine.
SUGGESTED WINE PAIRINGS
To guide your experience, here are a few examples of wine styles that complement the diverse flavours of Thai gastronomy:
Fragrant but non-mentholated dishes
Elegant Bordeaux reds or refined Champagne enhance delicate herbal aromas without masking them.
Curries
Natural rosé, Pinot Blanc Rousewien, Sancerre Blanc, or white Burgundy bring freshness and balance to the velvety richness of curry sauces.
Grilled dishes and satés
Full-bodied wines such as Rhône or Hautes-Côtes-de-Nuits complement the depth of grilled flavours. Sancerre (white or rosé) and Vacqueyras can also accompany dishes such as satés or the Fisherman’s Favourite beautifully.
Very spicy dishes
Two approaches are possible: a structured red wine to support the intensity of the chilli, or a refreshing Riesling or Portuguese Chardonnay to soften the heat and bring balance.
