Founder Lek Zimmer’s passion for Thai cuisine began at an early age, accompanying her family’s cook to the local fresh markets each morning. There, she learned how to select, prepare, and transform ingredients into daily four-course lunches and dinners — with menus that constantly evolved and never repeated.

What might have seemed like a demanding kitchen routine became a formative discipline, shaping her instinct for balance, variety, and creativity, and nurturing a deep respect for ingredients and tradition.

When she arrived in Luxembourg City, Lek discovered the absence of Thai restaurants and decided to open the first. Guided by intuition, curiosity, and deep respect for Thai culinary heritage, she created dishes that resonated with Luxembourg’s cosmopolitan diners while offering Thai guests the familiar, comforting flavours of home — a philosophy that continues to define Thai Celadon today.
